Fine Pasta Wheat Flour
Made from Triticum Durum (Di Grano Duro), our fine pasta wheat flour is made from an Indian heritage wheat variety called Bansi, which was released in 1918.
It is rich in carotenoids, which are antioxidants from vitamin-A and give this specific yellow color to this durum wheat flour.
Tipo 00 or T45 milling specification refers to very low extraction rates, i.e. a flour devoid of bran and germ, and made only from edosperm of the wheat kernel. Some artisan mills globally also describe it as "extra fancy durum flour" or "finely milled semolina".
The refined granulation offers consistent absorption, resulting in a silky-smooth pasta texture, while its high protein and gluten (higher on gliadin ratio) content make it ideal for flatsheet pasta and certain artisan bread recipes. In bread formulas, fine durum wheat flour retains moisture effectively and often benefits from increased hydration, which can enhance crumb openness.
